all right, you’ve done all the hard work to make sure you’ve bought great, fresh coffee, and put in that extra effort to dial in the brewing process using the right gear...

now it’s time to enjoy the coffee properly
this is another thing that’s purely up to personal taste, but if you’ve put in all this care into properly brewing good coffee:
take it black
WHY?
milk and sugar became standard to add because people were used to the coffee itself being too harsh and bitter to drink black (in other words... bad coffee)

if you’ve properly brewed fresh, good quality coffee, the result should be so smooth and tasty that adding milk and sugar would just defeat the purpose
this might come as a surprise, but good coffee shouldn’t be tasted piping hot:
proper coffee shines best between 120-140°F / 49-60°C
WHY?
when coffee is hotter than 150°F / 66°C (what you picture as piping hot coffee), the flavor is lost to the heat - you’re actually barely tasting the coffee at all

this was explained to me with a very relatable example - this is precisely why that gas station coffee you bought for that road trip is bearable at first (when it’s super hot), but is disgusting after it has cooled down

what makes tasting coffee fun is that different flavors start to shine as the coffee cools down, so your drink will continue to evolve and transform while you take the time to enjoy it
